These brownies are ideal for parties, bake sales, or when you want a show-stopping dessert that slices beautifully and tastes even better the next day.

Ingredients

For the Chocolate Brownie Layer

  • 1 cup butter, melted and slightly cooled
  • 2 1/2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 4 large eggs, at room temperature
  • 1 1/2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt

For the Cookies and Cream Filling

  • 225 g cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 large egg
  • 18 chocolate sandwich cookies, roughly chopped
  • 115 g cookies and cream chocolate bar, chopped

Instructions

Prepare the Pan

Preheat your oven to 180°C. Grease a 23×33 cm baking dish or line it with parchment paper, leaving some overhang for easy removal later.

Make the Brownie Batter

In a large bowl, combine the melted butter and granulated sugar. Whisk until smooth and glossy.
Add the vanilla extract, then whisk in the eggs one at a time until fully incorporated.

Sift in the flour, cocoa powder, and salt. Stir gently until the batter is thick, smooth, and evenly mixed. Set aside.

Prepare the Cookies and Cream Filling

In a separate bowl, beat the cream cheese with the sugar until smooth and creamy.
Add the egg and mix until fully blended and lump-free.

Fold in the chopped chocolate sandwich cookies and the cookies and cream chocolate pieces until evenly distributed.

Assemble the Brownies

Spread about two-thirds of the brownie batter evenly into the prepared baking dish. The batter is thick, so an offset spatula works best.

Spoon the cream cheese filling over the brownie layer and gently spread it into an even layer.

Dollop the remaining brownie batter on top of the filling, then carefully spread it to cover most of the surface. It does not need to be perfectly smooth.

Bake

Bake in the preheated oven for about 45 minutes, or until a toothpick inserted near the center comes out mostly clean with a few moist crumbs.

Remove from the oven and allow the brownies to cool completely in the pan before slicing.

Serving and Storage

Once fully cooled, cut into small squares, as these brownies are rich and filling.
Store leftovers covered in the refrigerator for up to 4 days. The texture becomes even better after chilling.

Helpful Tips

  • For clean slices, chill the brownies for 30 minutes before cutting
  • The cookies soften during baking, creating a creamy cookies-and-cream texture rather than a crunchy one
  • You can cut the brownies into smaller portions for serving at gatherings
