This Garlic Spaghetti is a simple yet deeply flavorful pasta dish made with everyday pantry staples. Slow-cooked garlic infused in olive oil creates a rich base, while tomatoes and fresh basil add balance and freshness. It is perfect for busy weeknights when you want something comforting, affordable, and satisfying without spending hours in the kitchen.
Serve it on its own, or pair it with crusty bread and a light vegetable side for a complete meal.
Ingredients
- 9 fresh garlic cloves, finely minced
- 1/3 cup extra virgin olive oil
- 4 tablespoons unsalted butter
- 2 cups crushed tomatoes
- Salt, to taste
- Black pepper, to taste
- 1 pound spaghetti
- 1/4 cup fresh basil, finely chopped
- Grated Parmesan cheese, for serving
Instructions
- Bring a large pot of water to a boil. Season generously with salt and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
- While the pasta cooks, heat the olive oil in a deep skillet over very low heat. Add the minced garlic and cook slowly for 15 to 20 minutes, stirring frequently. The garlic should soften and become fragrant without browning.
- Add the butter to the skillet and stir until fully melted into the garlic oil.
- Stir in the crushed tomatoes and season with salt and black pepper. Increase the heat slightly and let the sauce simmer gently for about 10 minutes, allowing the flavors to blend.
- Add the chopped basil to the sauce and stir well.
- Add the drained spaghetti to the skillet and toss until the pasta is evenly coated with the sauce. If the sauce feels too thick, add a small amount of the reserved pasta water to loosen it.
- Serve immediately, topped with freshly grated Parmesan cheese.
Tips for Best Results
- Keep the heat very low when cooking the garlic to avoid bitterness. If needed, briefly remove the pan from the heat.
- Fresh garlic makes a noticeable difference in flavor, so avoid pre-minced garlic.
- If fresh basil is unavailable, dried basil can be used in smaller quantity.
- A pinch of red pepper flakes can be added for gentle heat.
Storage
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. When reheating, add a splash of water or reserved pasta water to restore moisture.
