Crispy Zucchini Fritters
These zucchini fritters are golden and crisp on the outside, soft and tender on the inside, and full of fresh Mediterranean flavor. They are quick to prepare and work perfectly as a light meal, side dish, or appetizer. Enjoy them warm with a yogurt-based sauce, fresh salad, or simple tomato dip.
Ingredients
- 2 pounds (900 g) zucchini, grated
- 1 teaspoon salt (for draining zucchini)
- 1 large egg
- 1 large red onion, thinly sliced
- 2 cloves garlic, finely grated
- 1 teaspoon dried oregano or dill
- ¾ cup all-purpose flour
- 2 teaspoons baking powder
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons extra virgin olive oil, plus more for frying
- 4 ounces (115 g) feta cheese, crumbled (optional)
Instructions
- Prepare the zucchini
Grate the zucchini using the large holes of a box grater or a food processor. Place the grated zucchini in a colander, sprinkle with 1 teaspoon salt, and toss gently. Let it sit for 10 minutes to release excess moisture. - Remove excess liquid
Using your hands or a clean kitchen towel, squeeze the zucchini firmly until as much liquid as possible is removed. This step is essential for crispy fritters. - Make the batter
In a large mixing bowl, beat the egg. Add the drained zucchini, red onion, garlic, herbs, flour, baking powder, salt, black pepper, and feta cheese if using. Mix until a thick, cohesive batter forms. - Cook the fritters
Heat olive oil in a large skillet over medium-high heat. Scoop spoonfuls of batter into the pan and gently flatten each one. Cook for 3–4 minutes per side, or until golden brown and crisp. Add more oil as needed between batches. - Serve
Transfer cooked fritters to a plate lined with paper towels. Serve immediately while hot and crisp.
