Ingredients

  • 3 pounds (1.5 kg) baby red potatoes, washed and quartered
  • 1/4 cup (60 ml) olive oil
  • 6 large cloves garlic, finely minced
  • 1 tablespoon Italian seasoning
  • 3/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt (or to taste)
  • Freshly cracked black pepper, to taste
  • 1/2 cup unsalted butter
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a large baking sheet with olive oil or non-stick spray and set aside.
  2. Bring a large pot of salted water to a boil. Add the quartered potatoes and cook for 5 to 8 minutes, just until slightly tender. Drain well and allow them to dry for one to two minutes.
  3. In a large mixing bowl, combine the olive oil, minced garlic, Italian seasoning, salt, pepper, and grated Parmesan cheese. Mix well until a thick, seasoned coating forms. If the mixture becomes too dry from the cheese, add a small drizzle of oil.
  4. Add the warm potatoes to the bowl and toss gently until every piece is evenly coated.
  5. Arrange the potatoes cut-side down in a single layer on the prepared baking sheet. Position the baking sheet on the lower rack of the oven for the best browning.
  6. Roast for 25 to 30 minutes, flipping once halfway through cooking, until the potatoes are deeply golden and crisp around the edges.
  7. While the potatoes finish roasting, melt the butter and combine it with the freshly chopped parsley.
  8. Remove the potatoes from the oven and drizzle with the warm butter mixture. Toss lightly or leave as is for a beautiful presentation.
