Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a large baking sheet with olive oil or non-stick spray and set aside.
- Bring a large pot of salted water to a boil. Add the quartered potatoes and cook for 5 to 8 minutes, just until slightly tender. Drain well and allow them to dry for one to two minutes.
