A juicy grilled chicken breast smothered in sweet and savory teriyaki sauce, topped with melted Swiss cheese and caramelized pineapple, all nestled in a soft bun with creamy garlic aioli and crisp lettuce—this Grilled Teriyaki Chicken Sandwich is the ultimate summer crowd-pleaser!

Ingredients

  • 4 boneless, skinless chicken breast halves
  • ½ cup teriyaki sauce (homemade or store-bought)
  • 4 slices Swiss cheese
  • 4 pineapple rings (fresh or canned)
  • 4 tablespoons garlic aioli
  • 4 lettuce leaves (romaine or butter lettuce work great)
  • Thinly sliced red onion (to taste)
  • 4 hamburger buns, toasted if desired

Instructions

  1. Marinate the Chicken
Place chicken breasts in a large resealable plastic bag or shallow dish. Pour in the teriyaki sauce, ensuring all pieces are coated. Seal and refrigerate for at least 30 minutes or up to overnight for deeper flavor.
  2. Preheat the Grill
Heat your grill to high. Lightly oil the grates if needed to prevent sticking.
  3. Grill the Chicken
Remove chicken from marinade and grill over high heat for about 3–4 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). Lower the heat, place a slice of Swiss cheese on each chicken breast, and cover the grill to melt the cheese.
  4. Grill the Pineapple
While the cheese is melting, grill the pineapple rings for 2–3 minutes per side, until they are nicely charred and caramelized.
  5. Assemble the Sandwiches
Spread 1 tablespoon of garlic aioli on the top half of each bun. On the bottom bun, layer a lettuce leaf, a few slices of red onion, one grilled chicken breast with melted cheese, and one grilled pineapple ring. Close with the top bun.
  6. Serve
Serve the sandwiches immediately while hot, with your favorite side like sweet potato fries, chips, or a crisp salad.

Tips & Variations

  • Add some heat: Add sliced jalapeños or a drizzle of sriracha for a spicy twist.
  • Swap the cheese: Provolone or mozzarella also pair well with teriyaki.
  • Make it lighter: Use grilled chicken thighs or swap the bun for a lettuce wrap for a low-carb option.
