This Garlic Butter Steak and Potatoes Skillet is a quick and hearty one-pan meal perfect for busy weeknights or cozy weekend dinners. Juicy steak strips and crispy golden potatoes are tossed in a rich garlic butter sauce and finished with fresh herbs. It’s simple, satisfying, and packed with bold flavor in every bite.
Ingredients
- 1 lb beef steak, sliced into strips (ribeye, sirloin, or flank steak all work great)
- 2 cups baby potatoes, halved
- 4 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning (or a mix of dried thyme, oregano, and rosemary)
- Salt and black pepper, to taste
- Fresh parsley, finely chopped (for garnish)
- Optional:
- ½ teaspoon chili flakes (for a little kick)
- Freshly grated Parmesan (for added depth and richness)
Instructions
1. Sauté the Potatoes
In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.
Add the halved baby potatoes, placing them cut-side down in the skillet. Season with salt, pepper, and half of the Italian seasoning.
Cover and cook for 10–12 minutes, stirring occasionally, until the potatoes are golden brown and fork-tender.
Remove from the skillet and set aside.
2. Sear the Steak
In the same skillet, melt 1 tablespoon of butter.
Add the sliced steak in a single layer. Season with salt, pepper, and the remaining Italian seasoning.
Cook for 2–3 minutes per side, or until the steak is nicely seared and browned on the outside.
Avoid overcooking—steak should stay juicy and tender.
Remove the steak from the skillet and set aside with the potatoes.
3. Make the Garlic Butter
Lower the heat to medium-low.
Add the remaining 2 tablespoons of butter to the skillet and allow it to melt.
Stir in the minced garlic and sauté for about 30 seconds, just until fragrant and lightly golden.
4. Bring It All Together
Return the cooked steak and potatoes to the skillet.
Gently toss everything to coat evenly in the garlic butter.
Cook for an additional 1–2 minutes, just until everything is heated through.
5. Garnish and Serve
Sprinkle the dish with fresh chopped parsley.
If desired, add a pinch of chili flakes for heat or a dusting of Parmesan cheese for extra richness.
Serve immediately while hot and aromatic.
Tips for Success
- Cut the steak against the grain for maximum tenderness.
- If using larger potatoes, cut them into smaller bite-sized pieces for even cooking.
- Let the steak come to room temperature before cooking—it helps sear better and stay juicy inside.
- This recipe works well with cast iron for extra crispiness on the potatoes and a better sear on the meat.
Serving Suggestions
Pair this skillet with a fresh green salad, steamed green beans, or crusty bread to soak up the extra garlic butter. It also makes a satisfying standalone meal thanks to the balance of protein, carbs, and fat.
