Caprese Chicken Skillet: A One-Pan Mediterranean Delight
This Caprese Chicken Skillet is a vibrant, flavor-packed, and easy-to-make meal that brings the taste of the Mediterranean to your table. Tender chicken breasts are seared to golden perfection, then topped with juicy cherry tomatoes, creamy mozzarella, fresh basil, and finished with a drizzle of balsamic glaze. Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- ½ teaspoon paprika
- Salt and freshly ground black pepper, to taste
For the Caprese Topping:
- 2 cups cherry or grape tomatoes, halved
- 8 oz fresh mozzarella balls (ciliegine or bocconcini)
- ¼ cup fresh basil leaves, torn or chopped
- 2–3 tablespoons balsamic glaze, for drizzling
Instructions
Step 1 — Season the Chicken
Pat the chicken breasts dry with paper towels. In a small bowl, mix garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper. Rub the seasoning mix evenly over both sides of the chicken breasts.
Step 2 — Sear the Chicken
Heat olive oil in a large oven-safe skillet or braiser over medium-high heat. Add the chicken breasts and sear for 4–5 minutes on each side until golden brown. The chicken doesn’t need to be fully cooked at this stage.
Step 3 — Add the Tomatoes
Lower the heat to medium. Add the halved cherry tomatoes around the chicken. Cook for another 5–7 minutes, allowing the tomatoes to soften and release some of their juices. Stir occasionally to prevent sticking.
Step 4 — Add the Mozzarella
Reduce the heat to low. Scatter the mozzarella balls evenly over the skillet. Cover with a lid and cook for another 3–4 minutes, just until the cheese softens and begins to melt.
Step 5 — Finish and Serve
Remove the skillet from the heat. Sprinkle the torn basil leaves over the top. Drizzle with balsamic glaze before serving.
