These classic butter cookies are delicately crisp on the outside, incredibly buttery, and melt-in-your-mouth tender. Ingredients

  • 1 cup (220g) salted butter, softened
    (If using unsalted butter, add ½ teaspoon of salt)
  • ¾ cup (100g) icing sugar
  • 1 large egg (55g)
  • 2 teaspoons (10g) vanilla extract
  • 2 cups (250g) all-purpose flour

Instructions

Prepare the Cookie Dough:

  1. In a large mixing bowl, add the softened butter. Using a hand mixer or stand mixer, beat the butter lightly until smooth and creamy.
  2. Add the icing sugar and continue mixing until the mixture becomes light and fluffy.
  3. In a small bowl, lightly beat the egg. Add the beaten egg and vanilla extract to the butter mixture. Mix until fully incorporated.
  4. Sift the all-purpose flour into the mixture. Using a spatula, gently fold the flour into the wet ingredients until a smooth, soft dough forms.

Shape the Cookies:

  1. Transfer the cookie dough into a piping bag fitted with a large star tip (or use a sturdy ziplock bag with one corner snipped off and fitted with a tip).
  2. Line a baking tray with parchment paper. Lightly grease if desired.
  3. Pipe the dough onto the prepared tray in rosette patterns, turning in a gentle circular motion. Leave enough space between each cookie to allow for slight spreading during baking.

Bake:

  1. Preheat your oven to 350°F (180°C).
  2. Bake the cookies for 12–15 minutes, or until the edges turn a light golden brown.
    Note: Baking times may vary depending on your oven. Keep an eye on the first batch to avoid overbaking.

Cool and Serve:

  1. Carefully transfer the baked cookies to a wire rack and allow them to cool completely.
  2. Serve the cookies plain, or for extra indulgence, sandwich two cookies together with your favorite cream or chocolate filling.
