Fudgy, protein-packed brownies that deliver rich chocolate flavor while sneaking in extra nutrition from cottage cheese. Moist, satisfying, and perfect for a healthier dessert, snack, or post-workout treat.


Ingredients:

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or whole wheat flour)
  • ¼ cup unsweetened cocoa powder
  • ½ cup protein powder (chocolate or unflavored)
  • ¼ cup honey (or pure maple syrup)
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Pinch of salt
  • Optional: ¼ cup dark chocolate chips or chopped nuts

Instructions:

1. Prepare the Pan & Oven

Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper for easy removal.

2. Blend the Wet Ingredients

In a blender or food processor, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until the mixture becomes smooth and creamy.

3. Mix the Dry Ingredients

In a large mixing bowl, whisk together the almond flour, cocoa powder, protein powder, baking powder, and a pinch of salt. Make sure the dry ingredients are well combined to prevent clumping.

4. Combine Wet & Dry

Pour the blended wet mixture into the bowl of dry ingredients. Stir gently until just combined — avoid overmixing to keep the brownies tender.

5. Fold in Extras

If using, gently fold in dark chocolate chips or chopped nuts for added texture and flavor.

6. Bake

Pour the batter into the prepared baking pan and spread evenly with a spatula. Bake for 20–25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine).

7. Cool & Serve

Allow the brownies to cool completely in the pan before slicing into squares. This helps them set properly and makes slicing easier.
