This garlic roasted tomato flatbread is a flavor-packed dish that combines caramelized cherry tomatoes, sautéed spinach, and golden melted mozzarella atop soft and crispy naan flatbreads. It’s a simple yet elegant dish that works perfectly as a snack, appetizer, or even a light vegetarian meal. Bonus: It’s incredibly easy to prepare and customize!
Ingredients
- 2 pints cherry tomatoes, halved
- 5 garlic cloves, minced
- 2 teaspoons dried Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil, plus extra for drizzling
- 2 cups fresh spinach
- 2 tablespoons olive oil (for sautéing spinach)
- 3–4 cups mozzarella cheese, shredded
- 4 flatbreads (such as naan)
- Fresh basil, for garnish
Instructions
1. Roast the Tomatoes
Preheat your oven to 400°F (200°C).
In a large bowl, toss the halved cherry tomatoes with minced garlic, Italian seasoning, salt, pepper, and 2 tablespoons of olive oil. Spread them out in a single layer on a baking sheet lined with parchment paper. Roast for 45–50 minutes, or until the tomatoes are caramelized and slightly shriveled.
2. Sauté the Spinach
While the tomatoes are roasting, heat 2 tablespoons of olive oil in a skillet over medium heat. Add the spinach and cook for about 2–3 minutes, stirring frequently, just until wilted. Remove from heat and set aside.
3. Assemble the Flatbreads
Preheat your oven to 425°F (220°C).
Place the flatbreads on a large baking sheet. Layer each with shredded mozzarella, evenly distributing the roasted tomatoes and sautéed spinach on top.
4. Bake
Bake for 10–12 minutes, or until the cheese is fully melted and bubbling, and the edges of the flatbread are golden brown and crispy.
5. Garnish and Serve
Remove from the oven, sprinkle with freshly torn basil, and drizzle with a little extra olive oil if desired. Slice and serve warm.
Tips & Variations
- Cheese Options: Try adding crumbled feta or goat cheese for a tangy twist.
