Ingredients

  • 3 pounds boneless, skinless chicken thighs
  • 3 tablespoons brown sugar
  • 2 teaspoons onion powder
  • 2 teaspoons chili powder
  • 1 tablespoon smoked paprika
  • 2 teaspoons granulated garlic (or garlic powder)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon red pepper flakes

Instructions

  1. Make the spice rub:
In a small bowl, combine brown sugar, onion powder, chili powder, smoked paprika, granulated garlic, dried oregano, salt, and red pepper flakes. Mix well.
  2. Season the chicken:
Place the chicken thighs in a large mixing bowl or a zip-top bag. Add the spice rub and toss thoroughly to coat the chicken evenly.
  3. Marinate:
Cover and refrigerate the seasoned chicken for at least 4 hours, or overnight if possible, to allow the flavors to fully develop.
  4. Grill:
Preheat your grill to medium heat. Grill the chicken thighs with the lid closed for 6–8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  5. Rest and serve:
Transfer the grilled chicken to a platter and let it rest for 5 minutes before serving. Enjoy with your favorite sides like grilled vegetables, corn on the cob, or a fresh summer salad.

Recipe Tips

  • Make it spicier: Add more red pepper flakes or a pinch of cayenne pepper to the rub for extra heat.
  • Use bone-in thighs: If preferred, you can use bone-in, skin-on thighs. Just adjust the grilling time accordingly.
  • Leftovers: These thighs make excellent leftovers and are great for meal prep. Store in an airtight container in the fridge for up to 3 days.
