  • 2 large egg yolks, room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup (120ml) sour cream or whole plain yogurt, room temperature

Note: If using yogurt, be sure it’s full-fat for the best texture and flavor.


Instructions

  1. Preheat your oven to 350°F (180°C). Lightly butter or line a 12-cup muffin tin with paper liners.
  2. Combine dry ingredients: In the bowl of a stand mixer (or using a hand mixer), mix together the flour, sugar, baking powder, and salt for about 30 seconds.
  3. Add wet ingredients: Add the butter, egg, egg yolks, vanilla extract, and sour cream or yogurt directly to the dry ingredients. Beat at medium speed until the batter is smooth and satiny, about 30 seconds. Scrape down the sides of the bowl.
  4. Finish the batter: If any flour remains unmixed, stir with a spatula until fully incorporated. The batter will be thick and rich.
  5. Bake the cupcakes: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 20–25 minutes, or until the tops are pale gold and a toothpick inserted into the center comes out clean.
  6. Cool completely: Let the cupcakes cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
