  • ½ red onion, thinly sliced
  • 1 cup crumbled feta cheese, divided
  • 1 tablespoon fresh chopped dill

Zesty Herb Dressing:

  • 3–4 tablespoons granulated sugar (adjust to taste)
  • 2 teaspoons Dijon mustard
  • 3 teaspoons minced garlic
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • Juice of 1 lemon
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook the Tortellini:
    Bring a pot of salted water to a boil. Cook the tortellini according to the package instructions. Drain and rinse under cool water to stop cooking. Set aside to cool completely.
  2. Make the Dressing:

  3. Assemble the Salad:
