Description
These Garlic Mushroom Chicken Thighs are a quick and savory one-skillet dinner made in just 30 minutes. Juicy, golden-brown boneless chicken thighs are seared to perfection and served with tender mushrooms drenched in rich garlic butter. It’s a simple, comforting meal that’s perfect for busy weeknights and packs bold flavor with minimal effort.
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs (about 6 large thighs)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon red pepper flakes
- 2 tablespoons olive oil or coconut oil
- 8 ounces sliced mushrooms (cremini recommended)
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- Fresh parsley, chopped (for garnish)
Instructions
- Mix the Seasoning:
In a small bowl, combine onion powder, garlic powder, paprika, salt, black pepper, and red pepper flakes. - Season the Chicken:
Pat the chicken thighs dry with a paper towel. Sprinkle the seasoning blend evenly over all sides of the chicken. - Sear the Chicken:
Heat oil in a large skillet over medium-high heat (cast iron preferred for best sear). Add the chicken thighs and cook for 7–8 minutes per side, or until a golden crust forms and internal temperature reaches 165°F. Remove chicken and keep warm. - Sauté the Mushrooms:
In the same skillet, melt the butter. Add sliced mushrooms, season lightly with salt and pepper, and sauté for about 3 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant. - Combine and Finish:
Return the cooked chicken to the skillet and spoon some of the garlic butter mushrooms over the top. Garnish with freshly chopped parsley and serve immediately.
Tips & Variations
- Check Temperature: Always use a meat thermometer to confirm the chicken has reached a safe internal temperature of 165°F.
- Alternative Cuts: Boneless chicken breasts or tenders can be used. Slice breasts horizontally for quicker, even cooking.
- Make it Creamy: For a creamy variation, stir in ¼ cup heavy cream after sautéing the mushrooms.
