Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • Fresh basil leaves, for garnish (optional)

Instructions:

1. Preheat the Oven

Preheat your oven to 400°F (200°C). Lightly grease a baking dish with oil or cooking spray.

2. Season the Chicken

Rub the chicken breasts all over with olive oil. Sprinkle evenly with Italian seasoning, salt, and pepper. Arrange them in the prepared baking dish.

3. Prepare the Balsamic Glaze

In a small bowl, whisk together the balsamic vinegar, honey, and minced garlic.

Top each chicken breast with shredded mozzarella. Return the dish to the oven and bake for another 5–7 minutes, until the cheese is melted and the chicken reaches 165°F (74°C).

7. Garnish and Serve

Garnish with fresh basil leaves and an optional drizzle of extra balsamic vinegar. Serve hot with a side of roasted vegetables, mashed potatoes, or a fresh green salad.
