Why You’ll Love These Mini Pancakes:

  • Ready in just 5 minutes
  • Simple ingredients, big flavor
  • Freezer-friendly and perfect for make-ahead
  • Fun to make and even more fun to eat!

Ingredients:

  • 125 g all-purpose flour (¾ cup + 1 tbsp)
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • Pinch of salt
  • 1 egg
  • 25 g melted butter (2 tbsp)
  • 150 g buttermilk (½ cup + 4 tbsp)
    • or substitute with milk + ¼ tsp vinegar or lemon juice
  • 30 g sugar (2½ tbsp)

Instructions:

  1. Mix the Dry Ingredients
In a large bowl, whisk together the flour, baking soda, baking powder, sugar, and a pinch of salt.
  2. Combine the Wet Ingredients
In a separate container, mix the buttermilk, melted butter, and egg until smooth.
Tip: If using homemade buttermilk, let the milk and vinegar/lemon juice sit for 5 minutes before mixing.
  3. Make the Batter
Pour the wet mixture into the dry ingredients. Gently whisk until just combined. Do not overmix—it’s okay if the batter is a little lumpy.
  4. Pipe the Pancakes
Transfer the batter into a piping bag or a zip-top bag. Snip off the very tip to create a small opening.
Tip: A smaller hole gives you better control for perfectly round minis.
  5. Cook the Pancakes
Heat a non-stick skillet over medium heat (or grease a regular pan well). Pipe small dots of batter onto the pan, keeping them as uniform as possible.
Cook for about 2 minutes or until bubbles form and the edges set. Flip and cook for 15 seconds more. Remove promptly to avoid drying them out.
  6. Serve & Enjoy
Serve warm in a bowl with a drizzle of maple syrup, a pat of butter, or your favorite toppings.
Freeze leftovers in a ziplock bag and reheat as needed—perfect for busy mornings!
