Ingredients
For the Ribeye Steak Bites:
- 1 lb ribeye steak, cut into bite-sized cubes
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tsp fresh rosemary or thyme, finely chopped (optional)
- 1 tbsp soy sauce (optional, for umami depth)
For the Cheesy Smashed Potatoes:
- 2 lbs baby potatoes or Yukon Gold potatoes
- ½ cup milk
- 4 tbsp butter
- 1 cup shredded sharp cheddar cheese
- Salt and pepper, to taste
- ¼ cup sour cream (optional, for extra creaminess)
- ¼ cup chopped green onions or chives (optional, for garnish)
Instructions
1. Boil the Potatoes:
- In a large pot, bring salted water to a boil. Add the potatoes and cook until fork-tender, about 15–20 minutes.
- Drain the potatoes and return them to the pot.
2. Smash and Mix:
- Using a potato masher, gently crush the potatoes to your desired texture—leave them slightly chunky for a rustic feel.
- Add butter, milk, and cheddar cheese while the potatoes are still warm. Stir until the cheese is melted and the mixture is creamy.
- Season with salt and pepper. If using, fold in sour cream for a richer flavor.
- Garnish with chopped green onions or chives and keep warm.
3. Sear the Ribeye Steak Bites:
- Heat olive oil in a large skillet over medium-high heat.
- Add the ribeye cubes in a single layer and season with salt and pepper.
- Sear for 2–3 minutes per side until browned and cooked to your preferred doneness.
- Remove steak bites from the skillet and set aside.
4. Make the Garlic Butter Sauce:
- Reduce heat to medium-low and add butter and minced garlic to the same skillet.
- Sauté for about 30 seconds until fragrant.
- Add fresh rosemary or thyme (if using) and soy sauce (if using), stirring to combine.
- Return the steak bites to the skillet and toss to coat in the garlic butter for 1–2 more minutes.
5. Serve:
- Plate the warm cheesy smashed potatoes and top with the ribeye steak bites.
- Spoon the garlic butter sauce over everything for maximum flavor.
Tips & Variations:
- Use freshly grated cheese for the best melt and flavor.
- Swap cheddar for mozzarella or gouda for a different twist.
- Add a splash of cream or more milk if the potatoes are too thick.
