Ingredients:

  • 1 lb (450g) ground beef
  • 1 lb (450g) Italian sausage, casings removed
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup grated Pecorino Romano cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil (for greasing the pan)

Instructions:

  1. Preheat and Prep:
Preheat your oven to 375°F (190°C). Lightly grease a standard loaf pan with olive oil or spray with non-stick cooking spray.
  2. Mix the Meat Base:
In a large mixing bowl, combine the ground beef and Italian sausage. Add in the breadcrumbs, Parmesan, Pecorino Romano, parsley, basil, and garlic.
  3. Blend Wet Ingredients:
In a separate bowl, whisk together the milk and eggs. Pour this mixture into the meat mixture. Add the chopped onion, oregano, salt, and pepper.
  4. Combine Gently:
Mix everything just until combined—do not overmix, as this can make the meatloaf dense and dry.
  5. Shape and Bake:
Transfer the mixture into the prepared loaf pan and shape it into a loaf. Gently press it down to ensure it holds together.
    Bake uncovered for 45 minutes.
  6. Top with Sauce and Cheese:
Remove the meatloaf from the oven. Spread the marinara sauce evenly on top, then sprinkle the shredded mozzarella cheese over the sauce.
  7. Finish Baking:
Return the loaf to the oven and bake for an additional 15–20 minutes, or until the cheese is bubbly and the internal temperature reaches 160°F (71°C).
  8. Rest and Serve:
Let the meatloaf rest for 10 minutes before slicing—this helps retain its juices and improves flavor.

Serving Suggestions:
