Simple Chocolate Cake Recipe
This simple chocolate cake is for everyone to make, with two layers of soft and moist chocolate cake, filled and frosted with chocolate frosting. Perfect for any occasion!
Ingredients:
For the Cake:
- 2 cups (400 grams) granulated white sugar
- 1 3/4 cups (245 grams) all-purpose flour
- 3/4 cup (75 grams) unsweetened cocoa powder (natural or Dutch-processed)
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup (240 ml) warm water or coffee
- 1 cup (240 ml) milk
- 1/2 cup (120 ml) corn, vegetable, safflower, or canola oil
- 1 1/2 teaspoons pure vanilla extract
For the Chocolate Frosting:
- 6 ounces (180 grams) semi-sweet or bittersweet chocolate, coarsely chopped
- 1 cup (226 grams) unsalted butter, room temperature
- 2 cups (230 grams) confectioners (powdered or icing) sugar, sifted
- 1 1/2 teaspoons pure vanilla extract
Instructions:
- Preheat the Oven: Preheat the oven to 350°F (180°C). Butter or spray two 9-inch (23 cm) round cake pans with non-stick spray, and line the bottoms with parchment paper.
- Prepare the Dry Ingredients: In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- Mix the Wet Ingredients: In another large bowl, whisk together the eggs, warm water (or coffee), milk, oil, and vanilla extract.
- Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir or whisk until fully combined. The batter will be thin, which is normal.
- Bake the Cake: Evenly divide the batter between the two prepared cake pans. Bake for 27-32 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
For the Chocolate Frosting:
- Melt the Chocolate: Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Once melted, remove from heat and let cool to room temperature.
- Prepare the Frosting: In the bowl of an electric mixer (or with a hand mixer), beat the butter until smooth and creamy. Add the powdered sugar and beat until fluffy. Beat in the vanilla extract.
- Combine the Chocolate: Add the cooled melted chocolate to the frosting and beat on low speed until incorporated. Then increase the speed to medium-high and beat until smooth and fluffy.
Assemble the Cake:
- Once the cakes are completely cool, place one layer on a serving platter.
- Spread a generous layer of frosting over the top of the first layer.
- Place the second cake layer on top and frost the top and sides generously with the remaining frosting.
