Grilled Chicken Rice Bowl – Fresh, Flavorful & Satisfying!

This Grilled Chicken Rice Bowl is the perfect combination of healthy, hearty, and easy to make. Juicy marinated chicken pairs beautifully with crisp vegetables and fluffy rice for a wholesome meal that’s great for lunch or dinner.

Ingredients:

  • Lettuce leaves (romaine, green leaf, or iceberg work well)
  • 1 cup cooked brown or white rice
  • 1/2 cucumber, thinly sliced
  • 1 grilled chicken breast
  • Optional: chopped fresh parsley for garnish

For the chicken marinade:

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper

Instructions:

1. Marinate and Cook the Chicken

  • In a bowl, mix soy sauce, honey, minced garlic, and black pepper.
  • Add the chicken breast and let it marinate for at least 30 minutes.
  • Grill or pan-fry the chicken over medium heat until golden brown and fully cooked (internal temperature should reach 165°F / 74°C).
  • Let the chicken rest for a few minutes, then slice into strips.

2. Assemble the Rice Bowl

  • Add a generous layer of lettuce to one side of your serving bowl.
  • Spoon the warm cooked rice next to the lettuce.
  • Arrange cucumber slices on the opposite side of the rice.

3. Top and Serve

  • Place the sliced chicken on top of the rice.
  • Garnish with chopped parsley if desired.
  • Serve immediately and enjoy a well-balanced, delicious bowl!
