Juicy, flavor-packed lamb chops paired with a zesty, refreshing mint vinaigrette—perfect for a weeknight treat or elegant dinner!
Ingredients
For the Lamb Chops
- 10–12 lamb chops (rib or cutlet)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp ground cumin
- ½ tsp sweet paprika
- ½ tsp ground coriander
- Pinch of ground chili (optional)
- Cooking oil (olive oil, ghee, coconut, or macadamia oil)
For the Mint Vinaigrette
- 15 fresh mint leaves, finely chopped (about 2 tbsp)
- ¼ red onion, finely chopped
- 1 tsp mild red chili, chopped
- 1 tbsp capers, chopped
- 1 tsp caper brine
- 1½ tbsp lemon juice
- 3 tbsp olive oil
Instructions
1. Prepare the Spice Rub
In a small bowl, mix together salt, pepper, garlic powder, cumin, paprika, coriander, and chili (if using).
2. Season the Lamb
Pat lamb chops dry. Rub the spice blend evenly on both sides. Let rest for 15–20 minutes at room temperature to absorb flavors.
3. Cook the Lamb Chops
Heat a skillet or grill pan over medium-high heat with a splash of oil.
Sear lamb chops for 3–4 minutes per side, or until desired doneness (medium-rare: ~3 minutes per side). Adjust time for thickness.
4. Make the Mint Vinaigrette
In a bowl, combine mint, red onion, chili, capers, brine, lemon juice, and olive oil. Stir well. Taste and adjust lemon or salt if needed.
5. Rest and Serve
Remove lamb chops from heat. Let rest for 5 minutes. Arrange on a platter and spoon vinaigrette over the top.
6. Garnish and Enjoy
Garnish with fresh mint leaves and serve immediately. Ideal with roasted vegetables, salad, or couscous.
