Ingredients

For the Steak:

  • 1.5 lbs (680 g) sirloin or ribeye steak, cut into bite-sized cubes
  • Salt and black pepper, to taste
  • 1 tsp smoked paprika (optional)
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter

For the Potatoes:

  • 1.5 lbs (680 g) baby potatoes, halved or quartered if large
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme or rosemary

Garlic Butter Sauce:

  • 4 tbsp unsalted butter
  • 4–5 garlic cloves, minced
  • 1 tbsp fresh parsley, chopped (plus more for garnish)
  • Optional: squeeze of fresh lemon juice for brightness

Instructions

  1. Prepare the Potatoes:
    • In a large skillet over medium-high heat, heat 2 tablespoons of olive oil.
    • Add the halved baby potatoes in a single layer (cut side down).
    • Season with salt, pepper, garlic powder, and thyme. Sauté for 15–20 minutes, turning occasionally, until golden and fork-tender.
    • Remove from the skillet and set aside.
  2. Sear the Steak Bites:
    • Season steak cubes with salt, pepper, and paprika.
    • In the same skillet, add 1 tablespoon of olive oil and 1 tablespoon of butter.
    • Add steak cubes in a single layer and sear for about 2–3 minutes per side until browned and cooked to your liking. Do not overcrowd the pan – cook in batches if needed.
    • Transfer steak to a plate and keep warm.
  3. Make the Garlic Butter Sauce:
    • Reduce heat to medium. In the same skillet, melt 4 tablespoons of butter.
    • Add minced garlic and sauté for 30–60 seconds until fragrant (do not brown).
    • Stir in chopped parsley and a squeeze of lemon juice if desired.
  4. Combine and Serve:
    • Return cooked potatoes and steak to the skillet. Toss everything together in the garlic butter until well coated.
    • Garnish with extra parsley and serve hot.
