Garlic Butter Steak and Potatoes Skillet – A One-Pan Comfort Classic
This Garlic Butter Steak and Potatoes Skillet is the perfect weeknight dinner – hearty, satisfying, and made in just one pan. Juicy, seared steak bites and golden, crispy potatoes are tossed in a rich garlic herb butter for a meal that’s bursting with flavor and ready in under 40 minutes.
Ingredients
For the Steak:
- 1.5 lbs (680 g) sirloin or ribeye steak, cut into bite-sized cubes
- Salt and black pepper, to taste
- 1 tsp smoked paprika (optional)
- 1 tbsp olive oil
- 1 tbsp unsalted butter
For the Potatoes:
- 1.5 lbs (680 g) baby potatoes, halved or quartered if large
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme or rosemary
Garlic Butter Sauce:
- 4 tbsp unsalted butter
- 4–5 garlic cloves, minced
- 1 tbsp fresh parsley, chopped (plus more for garnish)
- Optional: squeeze of fresh lemon juice for brightness
Instructions
- Prepare the Potatoes:
- In a large skillet over medium-high heat, heat 2 tablespoons of olive oil.
- Add the halved baby potatoes in a single layer (cut side down).
- Season with salt, pepper, garlic powder, and thyme. Sauté for 15–20 minutes, turning occasionally, until golden and fork-tender.
- Remove from the skillet and set aside.
- Sear the Steak Bites:
- Season steak cubes with salt, pepper, and paprika.
- In the same skillet, add 1 tablespoon of olive oil and 1 tablespoon of butter.
- Add steak cubes in a single layer and sear for about 2–3 minutes per side until browned and cooked to your liking. Do not overcrowd the pan – cook in batches if needed.
- Transfer steak to a plate and keep warm.
- Make the Garlic Butter Sauce:
- Reduce heat to medium. In the same skillet, melt 4 tablespoons of butter.
- Add minced garlic and sauté for 30–60 seconds until fragrant (do not brown).
- Stir in chopped parsley and a squeeze of lemon juice if desired.
- Combine and Serve:
- Return cooked potatoes and steak to the skillet. Toss everything together in the garlic butter until well coated.
- Garnish with extra parsley and serve hot.
