Tender Slow-Cooked Beef Curry with Spices, Tomatoes, and Coconut Milk
Ingredients:
2 lbs beef chuck or stew meat, cut into 1-inch cubes
1 large onion, finely chopped
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons curry powder
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/2 teaspoon cayenne pepper (optional, for heat)
1 teaspoon salt
1/2 teaspoon black pepper
1 can (14.5 oz) diced tomatoes
1 can (13.5 oz) coconut milk
2 tablespoons vegetable oil
Fresh cilantro, for garnish
Instructions:
Sear the Beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the beef cubes and sear until browned on all sides. Remove and set aside.
Sauté Aromatics: In the same skillet, add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
Add Spices: Stir in the curry powder, cumin, turmeric, cayenne pepper, salt, and black pepper. Cook for another minute until fragrant.
Combine Ingredients: Return the seared beef to the skillet. Add the diced tomatoes and coconut milk. Stir well to combine.
Slow Cook: Transfer everything to a slow cooker. Cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender.
Serve: Spoon the curry over rice and garnish with fresh cilantro.
