Baked Salmon with Roasted Potatoes and Asparagus 

A simple, nutritious dinner made with juicy salmon fillets, golden roasted potatoes, and tender asparagus—all cooked to perfection for a flavorful and satisfying meal.

Ingredients:

  • 2 salmon fillets
  • 2 medium potatoes, halved
  • 1 bunch asparagus, woody ends trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • 1 tablespoon butter
  • Optional: lemon wedges for serving

Instructions:

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C).

Step 2: Roast the Potatoes

  • Wash and halve the potatoes.
  • Place them cut side down on a baking sheet.
  • Drizzle with 1 tablespoon olive oil and sprinkle with salt, pepper, and oregano.
  • Toss to coat, then roast for 25–30 minutes until golden and fork-tender.

Step 3: Add the Asparagus

  • While the potatoes roast, toss asparagus with 1 tablespoon olive oil, minced garlic, salt, and pepper.
  • After the potatoes have roasted for 25 minutes, add asparagus to the sheet and roast for an additional 10–12 minutes.

Step 4: Cook the Salmon

  • Season salmon with lemon juice, paprika, salt, and pepper.
  • Heat a non-stick skillet over medium heat and melt 1 tablespoon butter.
  • Place salmon in the skillet, skin-side down if applicable.
  • Cook for 3–4 minutes per side, or until golden and cooked through.

Step 5: Serve

  • Arrange roasted potatoes, asparagus, and salmon on a serving platter.
  • Garnish with lemon wedges if desired and serve immediately.
