Baked Salmon with Roasted Potatoes and Asparagus
A simple, nutritious dinner made with juicy salmon fillets, golden roasted potatoes, and tender asparagus—all cooked to perfection for a flavorful and satisfying meal.
Ingredients:
- 2 salmon fillets
- 2 medium potatoes, halved
- 1 bunch asparagus, woody ends trimmed
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- Juice of 1 lemon
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon dried oregano
- 1 tablespoon butter
- Optional: lemon wedges for serving
Instructions:
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Step 2: Roast the Potatoes
- Wash and halve the potatoes.
- Place them cut side down on a baking sheet.
- Drizzle with 1 tablespoon olive oil and sprinkle with salt, pepper, and oregano.
- Toss to coat, then roast for 25–30 minutes until golden and fork-tender.
Step 3: Add the Asparagus
- While the potatoes roast, toss asparagus with 1 tablespoon olive oil, minced garlic, salt, and pepper.
- After the potatoes have roasted for 25 minutes, add asparagus to the sheet and roast for an additional 10–12 minutes.
Step 4: Cook the Salmon
- Season salmon with lemon juice, paprika, salt, and pepper.
- Heat a non-stick skillet over medium heat and melt 1 tablespoon butter.
- Place salmon in the skillet, skin-side down if applicable.
- Cook for 3–4 minutes per side, or until golden and cooked through.
Step 5: Serve
- Arrange roasted potatoes, asparagus, and salmon on a serving platter.
- Garnish with lemon wedges if desired and serve immediately.
