Refreshing Lime Mousse Cheesecake

Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Lime Mousse Filling:
- 8 oz (225g) cream cheese, softened
- 1 cup powdered sugar
- ½ cup sour cream
- ½ cup heavy cream
- Zest of 2 limes
- ½ cup fresh lime juice (from 4–5 limes)
- 1 tsp vanilla extract
- 1 packet (2 ¼ tsp) unflavored gelatin
- 2 tbsp water

- Lime slices or zest (optional, for garnish)
Instructions
1. Prepare the Crust
- Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture firmly into the bottom of the pan.
- Bake for 8–10 minutes, then remove and let cool completely.
2. Make the Lime Mousse Filling
- In a small bowl, sprinkle gelatin over water. Let sit 5 minutes to bloom.
- In a large bowl, beat softened cream cheese and powdered sugar until smooth.
- Add sour cream, lime zest, lime juice, and vanilla extract. Mix until smooth.
- In another bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Microwave the bloomed gelatin for 10–15 seconds until dissolved, then quickly stir into the mousse mixture.
3. Assemble the Cheesecake
- Pour the lime mousse over the cooled crust and smooth the top.
- Refrigerate for at least 4 hours or preferably overnight until fully set.
4. Serve
- Carefully remove the cheesecake from the springform pan.
- Garnish with whipped cream and lime slices or zest before serving.
