Refreshing Lime Mousse Cheesecake

A light, creamy, and zesty dessert perfect for warm days or anytime you crave a citrusy treat!

Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Lime Mousse Filling:

  • 8 oz (225g) cream cheese, softened
  • 1 cup powdered sugar
  • ½ cup sour cream
  • ½ cup heavy cream
  • Zest of 2 limes
  • ½ cup fresh lime juice (from 4–5 limes)
  • 1 tsp vanilla extract
  • 1 packet (2 ¼ tsp) unflavored gelatin
  • 2 tbsp water

For the Topping:

  • Whipped cream (for garnish)
  • Lime slices or zest (optional, for garnish)

Instructions

1. Prepare the Crust

  • Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press the mixture firmly into the bottom of the pan.
  • Bake for 8–10 minutes, then remove and let cool completely.

2. Make the Lime Mousse Filling

  • In a small bowl, sprinkle gelatin over water. Let sit 5 minutes to bloom.
  • In a large bowl, beat softened cream cheese and powdered sugar until smooth.
  • Add sour cream, lime zest, lime juice, and vanilla extract. Mix until smooth.
  • In another bowl, whip the heavy cream until soft peaks form.
  • Gently fold the whipped cream into the cream cheese mixture.
  • Microwave the bloomed gelatin for 10–15 seconds until dissolved, then quickly stir into the mousse mixture.

3. Assemble the Cheesecake

  • Pour the lime mousse over the cooled crust and smooth the top.
  • Refrigerate for at least 4 hours or preferably overnight until fully set.

4. Serve

  • Carefully remove the cheesecake from the springform pan.
  • Garnish with whipped cream and lime slices or zest before serving.

Tips for Success

  • Use fresh lime juice for the best flavor—bottled juice won’t have the same zing.
  • Don’t skip blooming the gelatin—it’s key for a mousse-like texture that holds.
  • To slice cleanly, run a knife under hot water between cuts.
