Ingredients
For the Shrimp:
6-8 large shrimp, peeled and deveined
Salt & pepper, to taste
1 clove garlic, minced
1 tsp olive oil
1/2 tsp lemon juice
For the Bowl:
1/2 cup cooked brown rice
1/2 cup steamed broccoli
1/4 avocado, sliced
1/4 cup cherry tomatoes, halved
Fresh cilantro, for garnish
Instructions
Marinate the Shrimp:
In a medium bowl, combine shrimp, salt, pepper, minced garlic, olive oil, and lemon juice.
Mix well to ensure the shrimp is evenly coated.
Allow to marinate for about 15 minutes.
Cook the Shrimp:
Heat a skillet over medium heat.
Add the marinated shrimp to the skillet in a single layer.
Cook for approximately 2-3 minutes on each side, or until the shrimp turn pink and opaque.
Remove from heat and set aside.
Prepare the Bowl:
In a serving bowl, start with a base of 1/2 cup cooked brown rice.
Arrange steamed broccoli on one side, and place the sliced avocado and halved cherry tomatoes on the other.
Finally, top the bowl with the cooked shrimp.
Garnish and Serve:
Sprinkle fresh cilantro over the top for added flavor and a pop of color.
