A comforting twist on a classic favorite, this Crockpot French Onion Meatloaf is infused with savory flavors from French onion soup mix and topped with perfectly melted Swiss cheese. It’s hearty, cheesy, and slow-cooked to tender perfection—ideal for busy weeknights or cozy weekend meals.
Ingredients
- 1 ½ lbs (680g) ground beef
- 1 packet French onion soup mix
- ½ cup breadcrumbs
- ¼ cup milk
- 1 large egg
- Salt and pepper, to taste
- 4 slices Swiss cheese
Instructions
1. Make the Meatloaf Mixture
In a large bowl, combine ground beef, French onion soup mix, breadcrumbs, milk, egg, salt, and pepper. Mix until just combined—avoid overmixing to keep the meatloaf tender.
2. Shape and Place in Crockpot
Form the mixture into a loaf shape. Place directly into the bottom of your crockpot or use a loaf pan that fits inside. Ensure even placement for uniform cooking.
3. Cook Low and Slow
Cover and cook on LOW for 6–7 hours, or HIGH for 3–4 hours, until the internal temperature reaches 160°F (71°C).
4. Add the Cheese
About 15 minutes before it’s done, layer the Swiss cheese slices over the top of the meatloaf. Cover again and let the cheese melt and become bubbly.
5. Serve and Enjoy
Remove from the crockpot and let the meatloaf rest for 5–10 minutes before slicing. This helps lock in the juices. Serve warm.
Tips for Success
- Add-ins: Finely chopped mushrooms or onions add extra flavor and moisture.
