Ingredients

For the Chicken Meatballs:

  • 1 lb (450g) ground chicken
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup onion, finely diced
  • 1 tbsp fresh ginger, minced
  • 2 tsp curry powder
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste

For the Coconut Curry Sauce:

  • 1 can (14 oz / 400ml) coconut milk
  • 2 tbsp red curry paste (adjust to taste)
  • 1 tbsp fish sauce
  • 1 tbsp fresh lime juice
  • 1 tbsp brown sugar

For Cooking:

  • 1 tbsp vegetable oil

For Garnish:

  • 1/4 cup fresh cilantro, chopped

Instructions

Step 1: Prepare the Chicken Meatballs

In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, garlic, onion, ginger, curry powder, cumin, salt, and pepper. Mix until fully combined. Form into 20–24 small meatballs (1 to 1.5 inches each).

Step 2: Cook the Meatballs

Heat vegetable oil in a large skillet over medium heat. Add the meatballs in batches to avoid overcrowding. Cook for 3–4 minutes per side, until golden brown and fully cooked. Transfer to a plate and set aside.

Step 3: Make the Coconut Curry Sauce

In the same skillet, pour in the coconut milk. Stir in the red curry paste, fish sauce, lime juice, and brown sugar. Scrape up any browned bits from the pan for added depth of flavor. Simmer for 5–7 minutes until slightly thickened.

Step 4: Simmer the Meatballs

Return the cooked meatballs to the skillet. Gently stir to coat them in the sauce. Simmer for another 5–7 minutes to let the flavors meld and the meatballs soak up the rich curry sauce.

Step 5: Serve

Remove from heat and serve hot over steamed jasmine rice, noodles, or cauliflower rice. Garnish with chopped cilantro for a fresh finish.

Tips & Variations

  • Add Veggies: Mix grated carrots, chopped spinach, or zucchini into the meatballs for a nutritional boost.
  • Control the Heat: For a milder version, start with 1 tablespoon of red curry paste. For more heat, add a pinch of chili flakes or extra curry paste.
  • Make Ahead: These meatballs store well in the fridge for up to 3 days and taste even better the next day.
