This rich and savory dish combines tender chunks of beef, hearty vegetables, and a flavorful broth that simmers to perfection. Whether served at a family dinner or shared with friends, this classic beef stew is sure to warm everyone with its cozy and delicious flavors.

Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 2 cups celery, sliced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped, for garnish

Instructions:

1. Prepare the Beef

  • Season beef cubes with salt and pepper.
  • Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium-high heat.
  • Brown beef in batches without overcrowding. Cook for about 5–7 minutes per batch. Remove beef and set aside.

2. Sauté the Vegetables

  • In the same pot, add the remaining tablespoon of olive oil.
  • Sauté chopped onion for 3–4 minutes until translucent.
  • Add minced garlic and cook for another minute, stirring constantly.

3. Simmer the Stew

  • Return the browned beef to the pot along with any accumulated juices.
  • Stir in tomato paste, thyme, rosemary, and the bay leaf. Cook for 2–3 minutes to enhance the flavors.
  • Pour in beef broth and bring to a simmer. Once bubbling, reduce heat to low, cover, and let simmer for 1½ to 2 hours until beef is tender.

4. Add the Vegetables

  • Add carrots, potatoes, and celery.
  • Stir and continue simmering uncovered for 30–45 minutes, or until vegetables are tender.

5. Optional Thickening

  • To thicken, mix 1/4 cup flour with a small amount of cold water until smooth. Gradually stir into the stew and simmer an additional 10 minutes.

6. Final Seasoning

  • Remove the bay leaf.
  • Taste and adjust seasoning with additional salt and pepper as needed.
  • Garnish with fresh parsley before serving.

Serving Suggestions:

  • Serve hot with warm crusty bread or over creamy mashed potatoes.
  • Pair with a light green salad for a complete meal.

Tips:

  • Best Cut: Beef chuck is ideal for its tenderness and flavor after slow cooking, but brisket or round can also be used.
  • Slow Cooker Option: After browning beef and sautéing vegetables, transfer to a slow cooker. Cook on low for 6–8 hours or on high for 3–4 hours.
  • Flavor Boost: For a richer taste, a splash of red wine can be added with the broth (optional).
