Baked Semolina Cake Recipe
Ingredients:
120 g fine semolina
500 ml whole milk
100 g sugar
2 eggs
1 tsp vanilla extract (optional)
1 tsp baking powder (optional)
50 g melted butter (or vegetable oil)
A pinch of salt
Powdered sugar for dusting (optional)
Fresh fruit or nuts for garnish (optional)
Instructions:
Preheat the Oven: Preheat your oven to 180°C (350°F). Grease an 8-inch (20 cm) round cake pan or line it with parchment paper.
Prepare the Pudding: In a saucepan, combine the milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the milk is warm (not boiling). Gradually whisk in the semolina, stirring continuously to avoid lumps. Cook for about 5-7 minutes until the mixture thickens. Remove from heat and let it cool slightly.
Mix the Eggs: In a separate bowl, beat the eggs. If using, add the vanilla extract and melted butter or oil to the eggs and mix well.
Combine Ingredients: Slowly add the semolina mixture to the egg mixture, stirring continuously to combine everything smoothly. If desired, mix in the baking powder for added fluffiness.
Transfer to the Pan: Pour the mixture into the prepared cake pan, spreading it evenly.
Bake the Cake: Bake in the preheated oven for about 30-40 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and Serve: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely. You can dust it with powdered sugar and garnish with fresh fruit or nuts if you like.
