No-Bake Lemon Dazzling Blueberry Cream Cake
Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Lemon Cream Filling:
8 oz (1 package) cream cheese, softened
1 cup powdered sugar
1/2 cup fresh lemon juice (about 2-3 lemons)
Zest of 1 lemon
1 cup heavy whipping cream
For the Blueberry Topping:
2 cups fresh blueberries
1/4 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch (optional, for thickening)
Instructions:
Prepare the Crust:
In a mixing bowl, combine the graham cracker crumbs and granulated sugar.
Stir in the melted butter until the mixture is well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.
Place the crust in the refrigerator while you make the filling.
Make the Lemon Cream Filling:
In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
Gradually add the powdered sugar, mixing until well incorporated.
Add the fresh lemon juice and lemon zest, mixing until fully combined.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the lemon mixture until no streaks remain.
Spread the lemon cream filling evenly over the prepared crust. Smooth the top with a spatula.
Refrigerate for at least 4 hours, or until set.
Prepare the Blueberry Topping:
In a small saucepan, combine fresh blueberries, granulated sugar, and lemon juice.
Cook over medium heat until the blueberries start to burst (about 5 minutes).
If you want a thicker topping, mix cornstarch with a little water to create a slurry, then add it to the saucepan. Continue cooking until thickened.
Remove from heat and let cool completely.

Return to the refrigerator for another hour to chill.
