Ingredients

For the Grilled Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chipotle powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of 1 lime

For the Chipotle Ranch Sauce:

  • ½ cup ranch dressing
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 teaspoon fresh lime juice
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika

For the Burritos:

  • 4 large flour tortillas
  • 1 cup cooked rice (white or brown)
  • ½ cup black beans, drained and rinsed
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ cup diced fresh tomatoes
  • ¼ cup chopped fresh cilantro
  • ¼ cup sliced jalapeños (optional, for extra heat)

Instructions

1. Marinate the Chicken

In a bowl, combine the olive oil, chipotle powder, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice. Add the chicken breasts and toss until they are fully coated. Cover and marinate in the refrigerator for at least 15 minutes (or up to 2 hours for deeper flavor).

2. Grill the Chicken

Preheat a grill, grill pan, or cast-iron skillet over medium heat. Lightly oil the grates or pan.
Grill the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F (74°C) and the outside is beautifully charred.
Transfer to a cutting board and let the chicken rest for 5 minutes before slicing it into thin strips.

3. Prepare the Chipotle Ranch Sauce

While the chicken is grilling, whisk together the ranch dressing, adobo sauce, lime juice, garlic powder, and smoked paprika in a small bowl until smooth and creamy. Set aside.

4. Assemble the Burritos

Lay a tortilla flat on a clean surface.
Layer with a generous scoop of rice, black beans, sliced grilled chicken, shredded cheese, diced tomatoes, cilantro, and jalapeños if desired.
Drizzle the chipotle ranch sauce over the top.

5. Roll the Burritos

Fold the sides of the tortilla inward, then roll tightly from the bottom up to form a burrito.
Optional: Place the wrapped burrito seam-side down on a hot skillet for 1–2 minutes per side to crisp the outside.
