Shrimp and Spinach Stuffed Pasta Rolls
Ingredients:
For the Stuffed Pasta Rolls:
12-16 large pasta sheets (like lasagna or manicotti)
1 lb shrimp, peeled and deveined
2 cups fresh spinach, chopped
1 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup grated Parmesan cheese
1 egg
Salt and pepper, to taste
1 tablespoon olive oil
For the Creamy Roasted Red Pepper Sauce:
1 jar (12 oz) roasted red peppers, drained
1/2 cup heavy cream
1 tablespoon olive oil
1/2 teaspoon smoked paprika (optional)
Salt and pepper, to taste
Fresh basil, for garnish (optional)
Instructions:
Cook the Pasta:
Preheat your oven to 375°F (190°C).
Cook the pasta sheets according to package directions until al dente. Drain and lay them flat on a clean surface to cool.
Prepare the Filling:
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp, and cook until pink and opaque, about 2-3 minutes. Remove from the heat and chop into small pieces.
In a mixing bowl, combine the cooked shrimp, chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, and egg. Season with salt and pepper, then mix until well combined.
Stuff the Pasta:
Take a pasta sheet and place a spoonful of the filling mixture at one end. Roll it up gently and place it seam-side down in a greased baking dish. Repeat until all filling is used.
Make the Sauce:
In a blender or food processor, combine the roasted red peppers, heavy cream, olive oil, smoked paprika (if using), salt, and pepper. Blend until smooth and creamy.
Assemble the Dish:
Pour the creamy roasted red pepper sauce over the stuffed pasta rolls in the baking dish, making sure they are well coated.
If you’d like, sprinkle a bit more mozzarella or Parmesan on top for a cheesy crust.
Bake:
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and slightly golden on top.
Serve:
