Ingredients

For the Pasta and Alfredo Sauce:

  • 1 tablespoon olive oil
  • ¼ teaspoon black pepper
  • 2 garlic cloves, minced

For the Cajun Steak:

  • 2 ribeye steaks (about 1 inch thick)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon olive oil (for searing)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package directions until al dente (about 10–12 minutes). Drain the pasta, reserving about ½ cup of the pasta water, and set aside.
  2. Season and Sear the Steaks:
    Pat the ribeye steaks dry with paper towels. Season both sides generously with salt, black pepper, and Cajun seasoning.
    Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Once hot, add the steaks and sear for about 4–5 minutes per side, depending on thickness and preferred doneness. (For medium-rare, aim for an internal temperature of 130°F / 54°C.)
    Remove the steaks from the skillet, cover loosely with foil, and let them rest for 5 minutes. Slice thinly against the grain.
  3. Make the Cajun Alfredo Sauce:
    In the same skillet, reduce the heat to medium. Add another tablespoon of olive oil if needed. Add the minced garlic and sauté for about 1 minute until fragrant.
    Pour in the heavy cream and bring to a gentle simmer. Stir occasionally to prevent burning. Once the cream starts to bubble, add the Parmesan cheese, Cajun seasoning, black pepper, and a pinch of salt. Stir until the cheese has fully melted and the sauce is smooth and thickened (about 3–4 minutes). If the sauce becomes too thick, add a splash of reserved pasta water to loosen it.
  4. Assemble the Dish:
    Toss the cooked fettuccine into the Alfredo sauce, coating the pasta thoroughly. Arrange the sliced Cajun steak on top. Garnish with freshly chopped parsley.
  5. Serve and Enjoy:
