  • 60 g (½ cup) cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 180°C (360°F).
  2. In a bowl, whisk the egg with lemon zest and sugar until combined.
  3. In a separate bowl, mix flour, baking powder, and salt.
  4. Gradually combine the dry mixture into the egg mixture.
  5. Add the softened butter and mix until a soft dough forms.
  6. Press the dough evenly into the bottom and sides of an 8-inch tart mold. Set aside.

2. Make the Lemon Cream Cheese Filling:

  1. In a saucepan, whisk together the eggs and sugar.
  2. Add milk, cream cheese, and lemon juice.
  3. Slowly whisk in the cornstarch.
  4. Cook over medium heat, stirring constantly until thickened and smooth.
  5. Remove from heat and let cool slightly.

3. Assemble & Bake:

  1. Pour the cream filling into the prepared crust and smooth the surface.
  2. Bake for 35 minutes, or until the crust is golden and filling is set.
  3. Allow to cool completely before garnishing.

4. Garnish & Serve:

  1. Dust with powdered sugar and decorate with lemon slices.
  2. Slice and serve chilled or at room temperature.
