Strawberry, Pistachio & Shortbread Tartare Recipe
Ingredients:
For the Tartare:
400 g fresh strawberries, hulled and finely diced
2 tablespoons sugar
Juice of 1 lemon
50 g shelled pistachios, crushed
For the Shortbread Cookies:
100 g butter, softened
100 g sugar
1 egg
200 g flour
1/2 packet baking powder (about 2 g)
Instructions:
1. Prepare the Tartare:
In a mixing bowl, combine the finely diced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries with the sugar and lemon juice.
Allow the mixture to sit for about 15-20 minutes. This will help release the natural juices of the strawberries and create a refreshing topping.
2. Make the Shortbread Cookies:
Preheat your oven to 170°C (340°F) and line a baking sheet with parchment paper.
In a bowl, cream together the softened butter and sugar until light and fluffy.
Add the egg and mix until well combined.
In a separate bowl, sift together the flour and baking powder. Gradually add this dry mixture to the butter mixture, mixing until a dough forms.
Roll the dough into small balls and place them on the prepared baking sheet, flattening them slightly with your fingers or the bottom of a glass.
