Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). If using a pie crust, place it in a 9-inch pie dish and prick the bottom with a fork to prevent puffing.


Step 2: Cook the Spinach Filling

  1. In a skillet, heat olive oil over medium heat.
  2. Add chopped onion and sauté for 3–4 minutes, until soft.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add chopped spinach and cook until wilted, about 3–5 minutes. Remove from heat and let cool slightly.

Step 3: Make the Egg Custard

  1. In a bowl, whisk together eggs, milk, and heavy cream.
  2. Stir in mozzarella and Parmesan. Season with salt and pepper.

Step 4: Assemble the Quiche

  1. Spread spinach mixture evenly over the crust.
  2. Pour egg custard on top, spreading evenly.

Step 5: Bake

  1. Bake for 40–45 minutes, or until the center is set and the top is golden.
  2. If the crust edges brown too quickly, cover with foil.

Step 6: Cool and Serve

Let the quiche cool for 10 minutes before slicing. Serve warm or at room temperature with a side salad or fruit.
