Ingredients

  • Cottage Cheese – 400 g
  • Milk, Sour Cream, or Yogurt – 200 g (choose your preferred option for creaminess)
  • Sugar or Sweetener – 100 g (you can substitute with honey, stevia, or erythritol)
  • Gelatin – 15 g (approx. 1.5 tablespoons)
  • Cold Water – 90 g (to bloom the gelatin)
  • Vanilla Extract – 1 teaspoon
  • Mixed Fresh Fruits or Berries – 500 g
    Examples: strawberries, blueberries, raspberries, kiwi, mango, peaches

Instructions

Step 1: Bloom the Gelatin

In a small bowl, sprinkle 15 g gelatin over 90 g cold water. Let it sit for 5–10 minutes to bloom.
Gently heat the mixture on the stovetop or microwave until the gelatin fully dissolves—do not boil.
Set aside to cool slightly.


Step 2: Make the Creamy Base

In a blender or food processor, blend 400 g cottage cheese until smooth (or leave slightly textured if preferred).
Add 200 g milk/sour cream/yogurt, 100 g sugar or sweetener, and 1 tsp vanilla extract.
Blend or whisk until well combined and silky.


Step 3: Incorporate the Gelatin

Once the gelatin mixture has cooled slightly (but is still liquid), slowly pour it into the cottage cheese mixture while stirring constantly.
Mix thoroughly to ensure even distribution. This is key for a firm, sliceable set.


Step 4: Prepare the Fruits

Wash and dry 500 g of fresh fruits or berries.
Slice larger fruits like strawberries, peaches, or kiwi into bite-sized pieces.


Step 5: Assemble the Dessert

Line a rectangular or square pan with parchment paper for easy removal.
Pour half the cottage cheese mixture into the pan and smooth it out.
Add a layer of prepared fruits evenly over the top.
Pour the remaining mixture over the fruit layer, smoothing the surface.
Gently press additional fruit pieces on top for a decorative finish.


Step 6: Chill and Serve

Refrigerate the dessert for at least 4–6 hours, or until fully set.
Once firm, slice into neat squares or bars.
Serve chilled for a refreshing and visually appealing treat.
