If you’re in the mood for something crispy, cheesy, and packed with hearty flavor, these Cheesy Beef Empanadas are about to become your new go-to comfort food. Wrapped in flaky empanada dough and filled with seasoned ground beef, sautéed onions, jalapeños, and plenty of melted Colby Jack cheese, they make the perfect snack, appetizer, or main dish.


Ingredients

  • 2 tablespoons olive oil
  • 1 small white onion, diced
  • 1 jalapeño, deseeded and diced (optional for heat)
  • 2 garlic cloves, minced
  • 1 lb ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cumin powder
  • 1 teaspoon dried oregano
  • 12–15 round empanada wrappers (6-inch size)
  • 8 oz Colby Jack cheese, freshly grated
  • 1 egg
  • 2 tablespoons water

Instructions

  1. Preheat & Prep:
    Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone baking mats, or lightly spray with non-stick spray.
  2. Cook the Filling:
    In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent. Stir in jalapeño (if using) and cook for 3 more minutes. Add garlic and cook just until fragrant.
  3. Add Beef & Seasonings:
    Add the ground beef, then season with salt, pepper, cumin, and oregano. Cook, breaking it up as it browns, until fully cooked through. Drain excess fat and let the mixture cool for about 10 minutes.
  4. Assemble the Empanadas:
    Spoon some of the cooled beef mixture into the center of each empanada wrapper. Top with a generous tablespoon of shredded cheese. Fold in half, sealing the edges by pinching or pressing with a fork. For a traditional look, twist the edges into a crimped border.
  5. Egg Wash:
    Whisk together the egg and water. Brush each empanada with the egg wash to ensure a golden finish.
  6. Bake:
    Place the empanadas on the prepared trays, leaving space between each. Bake for 25–27 minutes, or until lightly golden. Allow them to cool for 10 minutes before serving.

Tips for Best Results

  • Use freshly grated cheese—it melts better and gives a creamier texture.
  • For extra crispiness, brush with oil instead of egg wash and air fry at 375°F for 12–15 minutes.
  • Add finely chopped cilantro or a splash of lime juice to the beef for a fresh kick.
