Ingredients

  • 4–6 white fish fillets (cod, haddock, or tilapia)
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 egg
  • 1 cup cold water (or club soda for extra crispiness)
  • Vegetable oil, for deep frying

Instructions

1. Prepare the Fish

Pat the fish fillets dry with paper towels. This step helps the batter stick more effectively and ensures a crispier coating.

2. Make the Batter

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder.
In a separate bowl, beat the egg. Add it to the dry mixture.
Slowly pour in the cold water (or club soda), whisking continuously until the batter is smooth and slightly thick, similar to pancake batter.

3. Fry the Fish

Heat vegetable oil in a deep skillet or frying pan to a depth of 2–3 inches. Bring the oil to 350°F (175°C).
Dip each fillet into the batter, making sure it’s fully coated.
Carefully lower the fish into the hot oil. Fry 2–3 pieces at a time to avoid overcrowding.
Cook for 4–5 minutes per side, turning once, until golden brown and crispy.
Transfer the fried fish to a plate lined with paper towels to drain excess oil.

4. Serve

Serve immediately for the best crunch. Add lemon wedges or your favorite dipping sauces like tartar sauce.
