Cheesy Beef Taco-Stuffed Tortilla Pockets
Ingredients
For the Beef Filling:
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and black pepper, to taste
- 1/2 cup tomato sauce
- 1/4 cup water
For the Taco Pockets:
- 6 medium flour tortillas
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1 tbsp olive oil (for brushing)
Instructions
1. Make the Beef Filling:
- In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks.
- Add the diced onion and sauté for 2–3 minutes until softened.
- Stir in garlic powder, cumin, smoked paprika, chili powder, salt, and pepper.
- Pour in the tomato sauce and water. Stir to combine and let it simmer for about 5 minutes, allowing the flavors to meld.
- Remove from heat and set aside.
2. Assemble the Tortilla Pockets:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Lay out the tortillas on a clean surface.
- Spoon a generous amount of the beef mixture onto one half of each tortilla.
- Top with shredded cheddar cheese and diced tomatoes.
- Fold each tortilla over to form a half-moon shape. Press gently to seal the edges.
3. Bake to Crispy Perfection:
- Arrange the stuffed tortillas on the prepared baking sheet.
- Lightly brush the tops with olive oil to promote even browning.
- Bake for 10–12 minutes, or until the tortillas are golden brown and crispy.
4. Garnish and Serve:
- Remove from the oven and sprinkle with fresh cilantro and chopped green onions before serving.
- Enjoy them hot with your favorite dipping sauce or a side of sour cream and guacamole!
Tips & Variations:
- Add some heat: Mix in diced jalapeños or a pinch of cayenne pepper to the beef filling for a spicy kick.
- Make it creamy: Add a dollop of sour cream or a sprinkle of crumbled feta before folding the tortilla.
- Switch the protein: Ground turkey or chicken work great in place of beef.
- Meal prep-friendly: These reheat well in the oven or air fryer for a quick lunch the next day.
