Ingredients

For the Fritters:

  • 3 medium onions, peeled and finely diced (450g / 1 lb)
  • 1 medium carrot, shredded (100g)
  • 2 garlic cloves, minced (10g)
  • 1 cup grated Parmesan cheese (100g)
  • 2 large eggs
  • ½ cup all-purpose flour (60g)
  • ⅓ cup fresh parsley, finely chopped
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup vegetable or olive oil, for frying (60ml)

Instructions

Step 1: Prepare the Vegetables

  • Dice the onions into small, uniform pieces for even cooking.
  • Shred the carrot using the large holes of a box grater. Pat with a paper towel to remove excess moisture if needed.
  • Finely mince the garlic cloves.

Step 2: Make the Batter

  • In a large mixing bowl, combine diced onions, shredded carrot, and minced garlic.
  • Add the grated Parmesan and mix to distribute evenly.
  • Crack in the eggs and stir to combine.
  • Add flour, parsley, paprika, salt, and black pepper.
  • Mix until the batter holds together but remains moist.

Step 3: Cook the Fritters

  • Heat a heavy-bottomed skillet over medium heat. Add oil to coat the bottom.
  • Using a spoon or scoop, portion out 2–3 tablespoons of batter per fritter.
  • Flatten each into ½-inch thick patties.
  • Fry for 2–3 minutes on one side, until golden and crispy.
  • Flip and cook for another 1–2 minutes.
  • Transfer to a paper towel-lined plate to drain excess oil.
