Cheesy Bolognese Roll-Ups ‍‍

These Cheesy Bolognese Roll-Ups are a comforting twist on classic lasagna—rich, saucy, and loaded with gooey cheese in every bite. Perfect for family dinners or a make-ahead meal, this dish combines savory bolognese with creamy ricotta and melty mozzarella for a hearty, irresistible bake.

Ingredients

  • 12 lasagna sheets, cooked al dente
  • 3 cups bolognese sauce, rich and meaty
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 egg, beaten
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Make the cheese filling: In a medium bowl, combine ricotta cheese, 1 cup of mozzarella, Parmesan, and the beaten egg. Season with salt and pepper to taste. Mix until smooth and creamy.
  3. Assemble the roll-ups: Lay out the cooked lasagna sheets on a clean surface. Spread about 2 tablespoons of the cheese mixture over each sheet, then spoon 2-3 tablespoons of bolognese sauce on top. Gently roll each sheet up, jelly-roll style.
  4. Layer and bake: Spread 1 cup of bolognese sauce on the bottom of the prepared baking dish. Arrange the roll-ups seam side down in the dish. Pour the remaining bolognese sauce over the top and sprinkle with the remaining 1 cup of mozzarella cheese.
  5. Bake uncovered for 25–30 minutes, or until bubbly and golden on top.
  6. Garnish with fresh chopped parsley before serving.

Tips & Variations

  • Add a pinch of crushed red pepper to the cheese filling for a little kick.
  • Swap ricotta for cottage cheese if preferred.
