Sweet Potato Pie with Condensed Milk
This classic Sweet Potato Pie is rich, creamy, and perfectly spiced—making it the ultimate comfort dessert for the holidays or any time of the year. The addition of sweetened condensed milk gives it a smooth texture and deep, caramel-like sweetness.
Ingredients:
- 1 large sweet potato (about 1 pound)
- 2 large eggs
- ½ cup sweetened condensed milk
- ½ cup butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- 1 (9-inch) unbaked pie crust
Instructions:
1. Cook the Sweet Potato:
- Place the whole sweet potato in a large pot and cover it with water.
- Bring to a boil and cook for 40-50 minutes, or until a fork easily pierces through the center.
2. Prepare the Sweet Potato Flesh:
- Preheat the oven to 350°F (175°C).
- Remove the sweet potato from the pot and run it under cold water for easy handling.
- Peel off the skin and discard it.
- Break apart the cooked sweet potato flesh and place it in a mixing bowl.
3. Make the Filling:
- Add the softened butter to the bowl of sweet potato flesh.
- Using an electric mixer, beat until well combined.
- Add the sugar, condensed milk, eggs, nutmeg, cinnamon, and vanilla extract.
- Beat on medium speed until the mixture is smooth and creamy.
4. Assemble and Bake the Pie:
- Pour the sweet potato mixture into the unbaked pie crust, spreading it evenly.
- Bake in the preheated oven for 55-60 minutes, or until a knife inserted in the center comes out clean.
5. Cool and Serve:
- Remove from the oven and let the pie cool completely before slicing.
- Serve as is, or top with whipped cream or a sprinkle of cinnamon for extra flavor.
Recipe Notes:
- For a silkier texture, puree the sweet potatoes in a blender before mixing.
- Swap nutmeg and cinnamon for pumpkin spice for a slightly different flavor.
- Let the pie chill for at least 2 hours before serving for the best texture.
