Ingredients:

  • 2 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil

  • 2 cups fresh spinach, loosely packed

  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ¼ cup chicken broth (or vegetable broth for a lighter option)
  • 1 teaspoon Dijon mustard

  • Salt and black pepper, to taste

Instructions:

1. Sear the Salmon
