This creamy spaghetti with chicken and diced tomatoes with chiles is a go-to recipe for those busy weeknights when you crave something comforting yet exciting. Growing up in the Midwest, pasta dishes were a staple in our household, and this one has a little kick to it, thanks to the chiles. It’s perfect for anyone who loves a bit of spice and wants a meal that’s both hearty and easy to prepare.
This dish pairs wonderfully with a simple green salad tossed in a light vinaigrette, which helps balance out the creaminess of the pasta. You might also consider serving it with some garlic bread or a side of roasted vegetables for a complete meal. A crisp white wine or a refreshing iced tea would complement the flavors nicely.
Servings: 4
Ingredients
12 oz spaghetti
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper to taste
1 teaspoon garlic powder
1 can (10 oz) diced tomatoes with green chiles
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional).
2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper to taste
1 teaspoon garlic powder
1 can (10 oz) diced tomatoes with green chiles
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional).
Directions
Cook the spaghetti according to package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt, pepper, and garlic powder, and cook until browned and cooked through, about 6-8 minutes.
Reduce the heat to medium and add the can of diced tomatoes with chiles to the skillet. Stir to combine and let it simmer for a few minutes.
Pour in the heavy cream and stir until the sauce is well combined. Let it simmer for another 2-3 minutes.
Add the cooked spaghetti to the skillet and toss to coat the pasta with the sauce.
Stir in the Parmesan cheese until melted and creamy.
Serve hot, garnished with fresh parsley if desired.
Variations & Tips
For a lighter version, you can substitute the heavy cream with half-and-half or a mixture of milk and Greek yogurt. If you prefer a vegetarian option, skip the chicken and add more vegetables like bell peppers or mushrooms. You can also use whole wheat or gluten-free pasta to suit dietary preferences. For extra heat, add a pinch of red pepper flakes.
