Directions
Preheat your oven to 400°F (200°C).
In a large skillet, cook the breakfast sausage over medium heat until browned. Remove the sausage and set aside, leaving the drippings in the skillet.
Add 1/4 cup of flour to the drippings and stir to combine. Gradually whisk in the milk and cook until the mixture thickens into a gravy. Season with black pepper.
Return the cooked sausage to the skillet and stir to combine with the gravy. Remove from heat.
In a large bowl, whisk together 2 cups of flour, baking powder, baking soda, and salt.
Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in the buttermilk until just combined, being careful not to overmix.
Spread the sausage gravy mixture into a 9×13-inch baking dish.
Drop spoonfuls of the biscuit dough over the top of the sausage gravy.
