Cheesy Ranch Oven Roasted Potatoes

Ingredients:

  • 2 lbs baby or small red/yellow potatoes, halved or quartered
  • 1 packet (1 oz) ranch seasoning mix
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon melted butter (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes: Clean and dry the potatoes. Depending on their size, cut them into halves or quarters and place them in a large bowl.
  3. Season the potatoes: Coat them with olive oil and melted butter (optional). Sprinkle ranch seasoning, garlic powder, salt, and pepper. Mix until the potatoes are well covered in the seasoning.
  4. Roast:
    • Lay the potatoes in a single layer on a baking sheet lined with parchment paper or foil for easy cleanup.
    • Roast for 25-30 minutes, flipping halfway through, until they turn golden and crispy on the outside and soft inside.
  1. Cheese it up:
    • Remove the potatoes from the oven, sprinkle the cheddar and Parmesan cheese over them, and return to the oven for another 5-7 minutes until the cheese melts and turns bubbly.
