- 2 lbs baby or small red/yellow potatoes, halved or quartered
- 1 packet (1 oz) ranch seasoning mix
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon melted butter (optional)
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh parsley (optional, for garnish)
Instructions:
- Preheat your oven to 400°F (200°C).
- Prepare the potatoes: Clean and dry the potatoes. Depending on their size, cut them into halves or quarters and place them in a large bowl.
- Season the potatoes: Coat them with olive oil and melted butter (optional). Sprinkle ranch seasoning, garlic powder, salt, and pepper. Mix until the potatoes are well covered in the seasoning.
- Roast:
- Lay the potatoes in a single layer on a baking sheet lined with parchment paper or foil for easy cleanup.
- Roast for 25-30 minutes, flipping halfway through, until they turn golden and crispy on the outside and soft inside.
- Cheese it up:
- Remove the potatoes from the oven, sprinkle the cheddar and Parmesan cheese over them, and return to the oven for another 5-7 minutes until the cheese melts and turns bubbly.
- Garnish and serve: Once done, garnish with fresh parsley if desired, and serve warm.
