- 8 ounces rotini or elbow macaroni

- 1 cup corn fresh, frozen, or canned
- 1/2 cup red onion, finely chopped
- 1 cup cream cheese, softened
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 cup crumbled bacon optional
- Fresh cilantro, for garnish
Directions:
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, lime juice, garlic powder, onion powder, salt, and pepper. Whisk until smooth and creamy.
- Add the cooled pasta, diced jalapeños, cherry tomatoes, corn, and red onion to the bowl. Toss until all the ingredients are well coated in the creamy dressing.
- If using, fold in the crumbled bacon for added flavor and texture.
- Cover the pasta salad and refrigerate for at least 1 hour to allow the flavors to meld.
