Creamy Jalapeño Popper Pasta Salad

Ingredients:

  • 8 ounces rotini or elbow macaroni
  • 4 fresh jalapeños, diced seeds removed for less heat
  • 1 cup cherry tomatoes, halved
  • 1 cup corn fresh, frozen, or canned
  • 1/2 cup red onion, finely chopped
  • 1 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup crumbled bacon optional
  • Fresh cilantro, for garnish

Directions:

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, lime juice, garlic powder, onion powder, salt, and pepper. Whisk until smooth and creamy.
  3. Add the cooled pasta, diced jalapeños, cherry tomatoes, corn, and red onion to the bowl. Toss until all the ingredients are well coated in the creamy dressing.
