Blueberry Brownie Cheesecake

Ingredients:
Brownie Layer:
1/2 cup unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup cocoa powder
1/2 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking powder
Cheesecake Layer:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 cup blueberry puree
Topping:
1 cup fresh blueberries
1/2 cup blueberry preserves
Instructions:
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
For the Brownie Layer:
In a medium bowl, whisk together melted butter, granulated sugar, eggs, and vanilla extract until well combined.
Add cocoa powder, flour, salt, and baking powder. Mix until fully incorporated.
Pour brownie batter into the prepared pan, spreading it evenly. Bake for 15 minutes. Remove from oven and let cool slightly.
For the Cheesecake Layer:
In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and blueberry puree.
Pour cheesecake batter over the cooled brownie layer, smoothing the top.
Bake for 55-60 minutes or until the center is set. Let cool completely before refrigerating for at least 4 hours.
For the Topping:
Spread blueberry preserves over the chilled cheesecake. Arrange fresh blueberries on top before serving.
Notes:
For extra texture, sprinkle crushed graham crackers over the blueberry topping.
